Today, we’re making it the easy way, with our instant puttu mix, made from Rathasaali rice.

Here’s what you’ll need to get started:

Recipe 1: Sweet Rathasaali Puttu
Let’s start with the classic sweet version. Super easy, super satisfying.
Step 1: Mix it up
Take 1 cup of our puttu mix in a bowl. What I usually do is mix a bit of salt into some water, just half a cup or so. Then I slowly add that into the flour and mix with fingers. No need to pour all at once, just a little at a time while mixing. The goal isn’t to make it wet, it should still be crumbly, kind of like when you touch damp sand at the beach. That’s when you know it’s ready. If you squeeze it in your fist, it should hold shape without being sticky. Close the bowl and let the mix rest for about 10 – 15 minutes.
Step 2: Layer it
Grab your puttu maker. Start with a spoon of grated coconut at the bottom. Then add a layer of the Rathasaali arisi puttu mix. Alternate between coconut and flour until it’s full, end with a coconut layer.
Step 3: Steam
Fill half the level of the puttu maker pot with water and put it to boil. Then place the puttu mix filled tube over it. If you don’t have a puttu maker, you can use an idli steamer, where you spread the mixture over the idli plate and steam it. Place the puttu maker tube on top of a pressure cooker or pot of boiling water. Steam for about 7 – 10 minutes. You’ll know it’s ready when the lovely smell hits your nose.
Step 4: Time to enjoy
Gently push the steamed puttu out of the cylinder. For a sweet version, serve it with banana, a spoonful of ghee, and a little palm sugar or country sugar on top. Simple and so comforting. Or, if you prefer something savory, pair it with a spicy curry like kadala curry (chickpeas). Totally transforms it into a hearty meal.

Recipe 2: Kara Kozhukattai (Spicy Rice Dumplings)
Here’s a spicy, snack worthy recipe that’s perfect for evenings or festive mornings.
Step 1: Mix it up
Boil 1¼ cups of water in a pan. Add a pinch of salt and a little sesame oil. Reduce the flame and slowly stir in the puttu flour. Mix until it forms a smooth dough and comes together. Let it cool slightly.
Step 2: Temper the spices
In a separate pan, heat a bit of coconut oil or groundnut oil. Add mustard seeds and let them crackle. Then toss in urad dal and chana dal, and sauté until golden.Next, add chopped green chilies, ginger, curry leaves, a pinch of asafoetida, and some grated coconut. Mix this into the rice dough.
Step 3: Shape & steam
Once the dough is cool enough to handle, grease your hands and shape little oval or cylindrical dumplings. Place them on greased idli plates or a steamer tray. Steam for about 8 – 10 minutes. Once they look glossy and feel firm, just serve them up with some spicy tomato chutney or coconut chutney so yummy!

Recipe 3: Sweet Coconut Puttu Balls
A fun little dessert that’s quick to make and super satisfying. Great for kids too!
Step 1: Prep the mix
Start by preparing the rice flour for the puttu. Sprinkle water over the rice flour, about half a cup of water for every half cup of flour. Add a pinch of salt for a little flavor. Mix it up until it feels like damp sand. Let it sit for 10 – 15 minutes so the moisture can soak into the flour, giving it the right texture for steaming.
Step 2: Steam it
Once the flour has rested, it’s time to steam the mixture. Use a puttu maker or an idli steamer to steam the flour mixture for about 7 – 10 minutes. This will allow the rice flour to cook through and become soft, which is essential for shaping it into balls in the later steps.
Step 3: Make the sweet coconut
In a small pan, melt ¼ cup of grated jaggery with a little water (2 – 3 tablespoons is enough). Once it’s syrupy, add 1 cup of grated coconut, a pinch of cardamom, and a small spoon of ghee. Stir well.
Step 4: Shape into balls
Mix the sweet coconut into the steamed flour while it’s still warm. Shape into small balls using your hands. That’s it! Healthy breakfast food is ready!
Step 5: Store or serve
Eat them warm, or store them in an airtight box. They’re best eaten within a day or two.
